• In a large mixing bowl mix Pack 1 with 2 tbsp oil, 1.25

  cups of water and prepare a smooth batter.

  Add chopped *chillies and rest for 5 minutes.

  Heat 2 cups of water in the steamer.

  Grease a 10" x 10" square-baking tin with 1 tsp oil.

• Add Pack 2 to the batter and mix quickly and thoroughly. Pour the batter in the tin, sprinkle with *chilli powder and place the tin in the steamer, cover and steam for 12 minutes.

  In a saucepan, heat remaining oil, add Pack 3 and let crackle. Pour in 1 cup of water and bring to a boil, add Pack 4 and boil for 5 minutes.

• Allow the dhokla to cool for 5 minutes and cut the dhokla into squares.

  Pour the tempering water evenly.

  Garnish the dhokla with chopped coriander and serve with green chutney and tamarind chutney.

Spice Genie Khaman Dhokla Kit

2 tbsp Coriander Leaves (chopped)

2cups Water for steaming, 1.25cups for the Batter & 1 cup for the Tempering

4 tbsp Oil

           *Optional

1.5 tsp *Green Chilies (chopped)

1/4 tsp *Red Chili Powder

The batter should have a pourable consistency, similar to thick paint. If it is too dense, the dhokla may not rise properly.

Steam on medium-high heat; using too high of a heat can lead to uneven cooking and affect the texture.

Allow the batter to rest for 5–10 minutes before incorporating pack 2, as this gives the semolina time to absorb the water.
